Caba Cottage + Cabarita Beach

Hello vacay vibes!

Two babies, two besties and a whole lot of coffee + nappies and we made it all the way to Cabarita Beach! Located just south of Kingscliff & The Gold Coast – I will just let you know, Cabarita beach is totally worth the drive! The entire Australian coastline is pure magical, but there sure is something about northern NSW that steals my heart every time! More warmer days and I’m obsessed with all the funky tropical plants!

My girlfriend and I are both mothers of two boys the same ages. We left our toddlers at home and got to enjoy a fun mum + bub vacation. We stayed at the incredible airbnb, Caba Cottage! This stunning, beachy cottage is renovated beautifully. It is located just a short stroll from the beach and town centre. The open plan living, dining and kitchen along with the spacious outdoor entertaining area was the perfect place for us to unwind. We couldn’t get enough of the interiors, the special touches and how the cottage is so gorgeously presented. I’m obsessed with the beautifully featured local artwork and pot plant placement. We spent our mornings exploring the lovely, quaint Caba Cove and the stunning surroundings.

Sugar Free Green Juice Gummies for Kids

Treats for kids don’t have to be full of sugar. It’s super simple to make your own sugar free lollies that your kids will certainly love! Phoenix couldn’t resist these super easy-to-make cactus, green juice gummies.

[Ingredients]

4 tbsp gelatin powder

2 tbsp Lakanto Monkfruit natural sweetener

1 cup pure green juice

[To make]

In a small saucepan, combine juice and sweetener until almost boiling.

Lower the heat to the lowest setting and whisk in gelatin.

Once gelatin has fully dissolved, remove from the heat and pour into gummy molds

Refrigerate until firm for about 30 minutes. Pop out of molds and store gummies in the fridge in an airtight container.

Raw Caramel Mini Cheesecakes

[Ingredients]

1/2 cup walnuts

1/2 cup almonds

1/4 cup pitted dates (soaked 10 minutes, then drained)

1 cup raw cashews (soaked 6 hours or overnight, then drained)

70g loving earth salted caramel chocolate

1/4 cup maple syrup

1 tsp vanilla

40g loving earth dark chocolate

1/2 tbsp coconut oil

2 tbsp cacao nibs

[To make]

Process walnuts, almonds and soaked dates on high until a crumb forms.

Press into silicon molds to form the crust.

Melt loving earth salted caramel chocolate over a double boiler.

Blend melted chocolate, cashews, maple syrup and vanilla until creamy.

Spoon and press into molds on top of the crust.

Freeze until firm.

Pop out of molds.

To create the icing – Melt dark chocolate and coconut oil together in a glass dish in boiling water.

Pour over top of each individual cake and garnish with chopped walnuts and cacao nibs.

Store in the refrigerator.

Enjoy.

Blueberry Coconut Popsicles

Phoenix has been icy pole & popsicle obsessed this summer. It must be the heat and also a toddler thing. The best part of his addiction is that he doesn’t even care what flavour they are OR what’s inside them. He thinks he’s getting a cold treat regardless… SO i’m definitely going to take advantage of this and sneak in all the things I want him to be eating that he is too picky to try. Find below the steps to make these creamy cold treats.

[Ingredients]

1 cup canned coconut milk

1/2 cup almond milk

3 tbsp maple syrup

1 cup blueberries

1 chopped kiwi

1 tsp vanilla extract

[To Make]

Blend coconut milk, almond milk, maple syrup and vanilla.

Add blueberries and kiwi and blend until roughly chopped.

Pour into popsicle moulds and freeze overnight.
