Breastfeeding and craving chocolate daily is the story of my life at the moment. This recipe has saved me from running to the shops to get chocolate all the time. Okay, don’t get me wrong.. I love a good block of Lindt, but this brownie is AMAZING. You’ll thank me later.

Okay, here is what you’ll need.

[Ingredients Brownie]

500g medjool dates

400g rolled oats

1 cup cacao powder

1 cup chopped walnuts

1 cup warm water

1 tbsp coconut oil

1 tsp vanilla

[Ingredients Icing]

1 cup cacao powder

1/2 cup coconut oil

3/4 cup rice malt syrup

[Recipe]

Blend oats to a fine powder and set aside.

Soak dates in 1 cup of warm water for 5 minutes.

Pour dates and water into processor. Add vanilla, coconut oil and cacao. Blend on medium-high until smooth.

Slowly add in oats and walnuts on medium speed until combined.

Spread and press into a lined baking dish.

Place icing ingredients into processor and blend on medium-high until smooth.

Ice the brownie and chill in the fridge before icing.

Store in the refrigerator.

*For a gluten free option, use almond meal instead of oats.

*For a high protein option, add 2-3 scoops of your favourite protein powder.

*For a tangy twist, add freeze dried strawberries or raspberries.

Follow these easy steps to create a beautiful Flower Crown for your Maternity shoot or special occasion.

[What You’ll Need]

floral wire
floral tape
wire cutters
eucalyptus stems
baby’s breath
small roses or flowers

[How To]

Measure your floral wire and make a crown the size for your head.

Wrap the wire in floral tape.

Cut greenery into smaller, workable lengths, roughly 15cm in length and cut flowers off with stems roughly 5cm in length.

Start attaching greenery and baby’s breath stems to the crown by wrapping the floral tape tightly around the stems. Begin to include flowers as you go and space them equally apart. You’ll want to wrap the tape around the stems about four to five times before moving to the next stem.

Continue until you complete your way around your crown.

Having healthy and yummy bite sized treats to grab on the go is essential in our household and even more now with a busy toddler. Lucky for us, Phoenix isn’t particularly picky yet. And he loves all the sweet treats I make with natural ingredients. This recipe is something I’ve created recently in my thermomix and it’s so good that I just had to share it. It’s also only four ingredients, so it’s super quick and easy to make if you’re a busy mum. Fresh medjool dates are so soft and smooth when blended that you never need any other sweeteners. You can easily find them at your local grocery store in the produce section. And choosing cashew nuts over other nuts make them extra creamy.

The secret ingredient that makes these balls amazing is the lemon zest. Lemon rinds, when taken internally, provides cleansing and digestive benefits and supports healthy immune function. If you don’t have a thermomix, don’t stress, this recipe can be easily made in any food processor.

[ RECIPE ]

18 fresh medjool dates, pitted

1 1/2 cups raw cashews

1 cup dessicated coconut

Zest of one lemon.

[ Blend ] all ingredients in thermomix on speed 6 for 25 seconds. You can also blend in any food processor until finely chopped

[ Shape ] into balls and roll in additional dessicated coconut

[ Store ] in the fridge in an airtight container
